A healthy Gluten free cake prepared with millets and goodness of coconut oil relishing to crave for more.
150 gm Little Millet
85 gm Honey
60 gm Grated carrot
90 gm Brown Sugar
105 gm Coconut Oil
4 gm baking powder
2 gms Psyllium Husk
5 gm Lemon zest
2 gm Cinnamon powder
30 gm Raisins
1/4 cup greek style yogurt
1/3 cup cream cheese
30 gms Honey
1. Dry roast the little millet, allow it to cool down and grind to a coarse powder, should be of Bombay rava texture.
2. Mix the dry ingredients ground millet, baking powder, Psyllium Husk, cinnamon powder and half quantity of sugar together.
3.In another bowl add eggs and half quantity of sugar and whisk until yellow.
4.Next add coconut oil and honey and it mix well.
5.Now add the dry ingredients in three batches and whisk together.
6.Mix in grated carrots, raisins and lemon zest.
7.Transfer to baking pan.
8.Bake for 30 minutes in 180 degree Celsius preheated oven.
9.For frosting, beat yogurt and cream cheese along with honey until smooth. Spread over the cake and enjoy.
You may use sugar for frosting instead of honey
